Chocolate Chip Cookie Dough Muffins

Lately it feels like for every one thing I accomplish, there are five more tasks that pop up in its place. We’ve all been there, right? Life. It’s busy. As a wife and stepmom with a full-time career and the blog, sometimes it feels like what should be front and center is on the backburner. Being a remote employee, I’m on the phone at all hours. Things are as busy as ever as I gear up for three business trips over the span of a month. My oldest step daughter just had a beautiful baby girl, too. We are lucky my husband’s youngest has been here to be part of welcoming a new baby. Long days of work, play and being at the hospital means we’ve needed to keep on track when it comes to eating; especially morning time. Pure Protein Plus Bars are helping us do that. My youngest stepdaughter and I came up with a fun recipe everyone in our house loves. We call our Pure Protein Plus Bar muffin recipe the “Busybody Breakfast”. It’s easy to make and something you can take with you when you’re on the run. Chocolate Chip Cookie Dough Muffins
Pure Protein Plus Bars
Pure Protein Plus Bars come in four new varieties:
- Cookies and Cream
- Mocha Brownie
- Apple Pie
- Chocolate Chip Cookie Dough
You can use any of them to make this recipe. We chose the Chocolate Chip Cookie Dough for our creation. Hubs and I both love that each bar contains 20-21 grams of protein. That’s pretty good after a workout or strenuous activity and since I need to be careful of sugar intake, I especially like that they’re low in sugar. Oh and for all you gluten-free peeps, they’ve got you covered, too. In my best game-show voice: but wait! That’s not all: No artificial sweeteners, completely GMO-free and they have between 15-16 grams of fiber per bar! You can grab them all at Walmart in the Adult Nutrition aisle:
Pure Protein Plus Bars Muffin Recipe
Here’s what else you’ll need. Be sure to grab the printable recipe card below to take shopping with you:
Ingredients
2 cups white wheat flour
2⁄3 cup milk
1⁄2 cup butter, melt it and then cool in the fridge for a little while (I use Irish Butter)
1⁄3 cup light-brown sugar, packed (I use organic)
1⁄3 cup raw honey (you can also use regular sugar)
2 teaspoons baking powder
1 teaspoon Mexican vanilla (you can also use regular)
1⁄2 teaspoon salt
2 eggs, whip them a little
2 NEW Pure Protein Plus Bars chopped into small pieces – Chocolate Chip Cookie Dough Flavor
Directions for Pure Protein Plus Bars Breakfast Muffins:
Preheat Oven to 400°F
Set aside 12 pieces of the chopped Pure Protein Plus Bars
Put all ingredients into a food processor except for the chopped Pure Protein Plus Bars
Mix for about a minute until all ingredients are well blended
Gradually add chopped Pure Protein Plus Bars and blend, adding until all pieces are well processed
Spoon into muffin liners or tin that has been sprayed with cooking spray
Take the 12 set-aside Pure Protein Plus Bars pieces and place on top of muffins

Bake for 15 minutes (oven times may vary – put a skewer or toothpick into muffin and make sure it comes out clean)
Let cool and serve with your favorite preserves
