San Diego Sunset Cocktail using VEEV®|VitaFrute™

Now, you know I like my vodka. But after learning about VitaFrute™ Cocktails, I decided to cheat! And you know we San Diegans looove our acai! Even cooler – they are eco-conscious and give back to the planet! Hearing that VEEV® is also known as a much better alternative to vodka and offers a great selection of flavors like Margarita, Lemonade and Cosmopolitan available nation-wide, I had to try it. So today  I moseyed on by my local Costco and grabbed the newest flavor in the line-up, the Coconut Colada gift pack which comes with two free mason jars. So fun!

San Diego Sunset Cocktail with Veev

You’re really going to like this – the entire line is under 125 calories per serving and if you don’t feel like making much effort, no problem. Your VEEV® | VitaFrute™ is ready to drink! Just pour it right over ice and you’re good to go! I, of course, put my own San Diego spin on the Coconut Colada and came up with the scrumptious San Diego Sunset Cocktail using just a few ingredients. So let’s get started! Here’s what you’ll need:

  • One bottle of VEEV® | VitaFrute™ Coconut Colada
  • 10 Key Limes (I am sure this would also work great with regular limes)
  • Mint sprigs
  • Organic Tonic Water (optional)
  • Organic Grenadine
  • Muddler
  • Cocktail Shaker
  • Shot glass
  • Straws

Chop about 6 mint leaves, put into cocktail shaker and muddle to release the oils. Extract juice of 9 Key Limes using manual hand juicer and pour into shaker. Fill one shot glass with organic grenadine. Put half of grenadine in bottom of one mason jar and put other half in bottom of second mason jar. Put five to six ice cubes on top of grenadine in the mason jars. Fill cocktail shaker with ice cubes and pour half of the VEEV ® | VitaFrute ™ Coconut Colada into the shaker. Shake well for about thirty seconds and pour slowly into mason jars so the grenadine doesn’t entirely mix with the rest of the liquid. As I like to cut the sweet sometimes, top off with a splash of organic tonic water (optional). Use remaining key lime and mint to garnish. I use straws I keep in the freezer to help keep drinks cool, but any straw will do! Or skip the straws altogether, sip and enjoy! Serves two. Easy, refreshing and delicious!
