Banana Oatmeal Chia Seed Smoothies
Here’s what you need:
- A blender
- 2 bananas
- 1/2 cup old-fashioned oatmeal (not instant) – cooked
- 2 cups Almond Milk (I use unsweetened, but you can use Vanilla or Coconut if you like)
- 2 teaspoons of Chia seeds (ground flaxseed would also work)
- 2 cups of ice
- Raw honey – I add this to the oatmeal after it’s cooked – add as much or as little as you like
Directions: Combine all ingredients into blender but the ice. Blend until they’re smooth then add ice a few cubes at a time. My blender has a spout so I put them in through there. I blend for about two minutes.
Pour and enjoy!
Flourless Banana Oatmeal Muffins
If you feel like baking, but don’t want a big mess or hassle, these are for you!
Preheat Oven to 400°F
Here’s what you need:
- A blender or food processor (I used my Ninja blender)
- 2 bananas
- 2 1/2 cups old-fashioned oatmeal (not instant)
- 2 eggs
- 3/4 cup sugar (or equivalent substitute)
- 1 cup Greek Yogurt
- 1/2 teaspoon Baking SODA
- 1 1/2 teaspoons Baking POWDER
- Cooking spray (I used Pam Olive Oil Spray)
- Muffin tin
Note: I wouldn’t use paper liners, but silicone liners could work. I sprayed my muffin tin and these came out okay after cooling. I did have to use a knife around the edges to loosen.
Directions: Put all ingredients but the oatmeal into blender or food processor and blend. Then add oatmeal. I added it about 1/2 a cup at a time. Blend until the oats are smooth.
Since my blender has a pour spot, I poured the batter directly into my muffin tin. I also did some chocolate shavings on half of the muffins. Totally optional:
Bake for 20-25 minutes. I did twenty minutes and that was plenty. Remove from oven, let cool and enjoy! These taste like banana bread so you could also add nuts for a banana nut bread taste.
